Harvest : Hand picked in crates, sorted on the vine.

Harvest dates: September 20 to October 3, 2016

Vinification : Total de-stemming but no crushing, no yeasting.

 Cement vats of 40, 45, 50, 55, 60, 65, 70, 75, 80 hl

Ageing: On fine lees for 12 months in barrels (of one wine and two wines)

 in a reducing medium, extremely low sulphite levels

Cooperages : Taransaud, Ermitage, Berthomieu

Blend 2016: 60% Cabernet Sauvignon

33% Merlot

7% Petit Verdot

Production 2016 : 22000 bottles - 900 magnums
