Cornas 2017 Granit 60 - Vincent Paris
Comes from 3 plots selected for their high quality: 60 year old vines of average age, with slopes of up to 60%, where the vines grow slowly between the pebbles to give yields of less than 30 Hl/ha.
Production: 4 to 5000 bottles.
Vinification
The harvest is 70% destemmed. After a week of cold maceration (12°C) the fermentation starts naturally, the vats are pumped over morning and evening and are saturated with carbon dioxide. The vinification lasts 3 to 4 weeks.
Maturing
Is made 3 months in vats then 1 year in barrels from 2 to 8 years old (No new barrels, to respect the perfumes of the terroir). This wine is a great Cornas combining power and finesse.
Tasting
On the nose, violet, cherry, blackberry and liquorice aromas emerge. On the palate, spices and black fruit jam notes flatter the taste buds of experienced tasters. A great concentration with silky tannins can be noted. Very long on the palate. Requires a little ageing, can be kept for 20 years.
