Caillotes (limestone from the Sancerrois region). Oxfordian limestone providing complexity and minerality, on a 40% slope.

From the moment the grapes arrive in the cellar, they are handled gently and with respect for the fruit
Long and gentle pneumatic pressing
Careful handling of the juice without rushing the must (by gravity or slow, gentle pumping)
Yeasting, only with selected neutral yeasts
Fermentation and maturation in demi-muids (600 litre barrels) and cigars (350 litre long barrels) on fine lees. The barrels come from the cooperage Atelier Centre France, which uses steam strapping and carefully selects the wood to ensure the fineness of the grain and avoid overly pronounced wood markings.
Aged for a minimum of one year in casks
Racking and blending of the half casks and cigars to let the wine rest for about 6 months.
Handling in the cellar is reasoned and respectful, and is carried out only if necessary. This approach aims to preserve the integrity and the sensorial framework naturally present in our grapes.
DAMOCLES was born from a desire to isolate a particular terroir, in this case the Côte de l'épée in the village of Amigny. This terroir is one of the emblematic places of the Sancerre appellation. Particular care and attention is given to the vines throughout the year. As soon as the wine arrives in the cellar, this particular attention is intensified with fermentation and maturation in wood. The choice of 600 litre demi-muids from Atelier Centre France brings out the finesse, elegance and mineral purity of Côte de l'épée. These barrels, hooped with steam and with fine-grained wood, will underline this spirit of tension when tasted, while letting the terroir express itself.
DAMOCLES is the culmination of 10 years of hard work in the vineyards to bring me closer to the ideology and spirit that drives me. Damoclès is a wine with a particular tension and a chiselled and crystalline volume in the mouth.
