Thierry Germain's domain has become in a short time the reference of the Saumur-Champigny appellation. To be discovered without further delay!

- Vineyard work: Yield of 45 hl/ha

- Organic and biodynamic work: Biodyvin label and Ecocert certification

- Vinification : Hand harvested in small boxes, sorting table before vatting. 100% destemming. Fermentation in 60 hl truncated cone-shaped vats at a temperature of 15 to 22 degrees, preceded by a maceration of 2 to 5 days for the indigenous yeasts to start working. Infusion + pumping over every day for 5 minutes. Vatting for 15 to 20 days, followed by a one-year ageing period on the lees in wooden vats of 60 hl and 12 hl oval. The Terres Chaudes are neither filtered nor fined before bottling.

- Tasting: The wine has an intense ruby colour. Bright and luminous, with hints of violet and cherry. Shy and distinguished, the first nose, still on the reserve, gives a glimpse of great promise. With aeration, it gradually reveals the secrets of its origins. The 2nd nose lets the fruit speak for itself. Spices: pepper, cloves, cinnamon. The attack is straight. The fruit is slightly stewed and brings thickness. With a nice acidity, we note aromas of eucalyptus and bergamot. The alcohol is present and brings solidity but also flexibility to the whole. The tannins are fine and elegant. The finish is long. This wine will go wonderfully well with a seven o'clock lamb parmentier or a venison with prunes.
