- Vinification of the grape varieties separately and by plot
- 150 hl concrete vats
- No yeasting
- Maximum temperature: 30°, refrigerated by flags
- Racking: 2 per day
- Maceration time: 30 days
- Ageing : Concrete vat for 18 months
- Bottling : No fining and light filtration at bottling
