He has chosen organic and biodynamic farming methods. At Domaine Fontchêne, respect for biodiversity and natural cycles is a top priority. The soils are carefully tended to preserve microbial life, and the use of chemicals is strictly prohibited. This rigorous approach allows the vines to draw the very essence from the limestone bedrock and fully express it in the grapes.
The vineyard is distinguished by a careful selection of grape varieties typical of the region, yet interpreted with a modern, fresh touch. Varieties include Grenache, Syrah, and Mourvèdre for the reds and rosés, as well as Roussanne, Marsanne, and Vermentino (Rolle) for the whites. René Milan constantly seeks to capture the unique identity of each vineyard plot, favoring controlled yields to ensure optimal concentration and aromatic purity.
In the cellar, the work continues with the same rigor and authenticity. Vinification is carried out naturally, using indigenous yeasts and keeping sulfur additions to an absolute minimum.
