Vinification and Aging

Vinification is carried out naturally using indigenous yeasts while keeping sulfur additions to a strict minimum. The aging process is executed with high precision, often utilizing concrete tanks or demi-muids, which nourishes the wine's complexity and structure without ever masking its genuine character.
Tasting and Pairings
Displaying rare complexity, the nose blends notes of candied fruits, sweet almond, and garrigue herbs, all enhanced by a vibrant mineral signature.
