This red wine hails from an exceptional terroir in the heart of the Alpilles IGP, where vines thrive on clay-silt soils scattered with rounded pebbles. This unique geological makeup provides both freshness and an ideal release of stored solar heat. The blend harmoniously unites iconic varieties—Cabernet Sauvignon, Cinsault, Merlot, and Syrah—combining structure, roundness, and the aromatic character typical of the South.
Winemaking and Maturation
Work at the estate is defined by surgical precision: the harvest is carried out entirely by hand using 15 kg crates to ensure the absolute integrity of the berries. Following destemming, vatting, and crushing, fermentation takes place separately for each variety in stainless steel tanks at a controlled temperature of 25°C, accompanied by very gentle extraction via short, daily pump-overs. After a three-week maceration period, the wine undergoes an extended 18-month maturation in stainless steel tanks—a technical choice that preserves the fruit's purity and vibrancy, free from any oak influence.
Tasting and Food Pairing
Visually, the wine displays an intense, brilliant cherry hue. The nose is highly expressive, opening with luscious notes of raspberry and sweet spices. On the palate, the texture is refined and fluid, driven by crisp, fresh fruit flavors and supple tannins. This appealing, airy profile reveals notes of blackcurrant, pepper, and a refreshing hint of thyme, leading to a mouth-watering finish with lovely, tangy length. To fully appreciate its verticality, serve it slightly chilled at around 14°C, alongside beef carpaccio, a fine charcuterie board, or marinated summer grilled meats.
