VINEYARD MANAGEMENT
The plots are trained either as traditional low vines (10,000 vines/ha and single Guyot pruning) or as lyre vines (double Guyot pruning).
VINIFICATION AND AGEING
Hand-picked at optimum ripeness.
Vinification: in 228-liter vats and barrels.
Long aging on lees: 12 months on average without new barrels, then a few months in vats before bottling.
Our wines are unfiltered, unfined and non-chill-stabilized, and may show a deposit.
