“Despite its superb expression of red fruit, this Pommard stands out for its exceptional mineral character. It has a firm structure, without falling into the chewy density of the wines of yesteryear, or the sometimes too-smooth suavity of some modern interpretations of this terroir. Subtle peppery notes and bark accents can also be detected. The finish reveals an exciting vegetal freshness, brought about by the use of whole bunches.”

VINIFICATION AND AGEING
Hand-picked at optimum ripeness.
Vinification: gentle extraction, with a high proportion of whole grapes (70%), in wooden casks.
Aging: 12 months on average, 50% in new oak.
TASTING & FOOD PAIRING
A frank nose of raspberry and blackcurrant. On the palate, the tannins are very fine, far from the tannic power of certain wines of the vintage. Decant while still young to reveal its full complexity.
Pair with grilled meats or spicy cheeses.
