A deep, dark wine with a hint of meatiness. Extraordinary power, imposing structure and rare concentration for a Hautes-Côtes-de-Beaune. Intense aromas of elderberry and smoke, reminiscent of autumn wood fires. Very compact, structured finish, marked by a pronounced licorice note. A wine of great tension and energy.
VINEYARD MANAGEMENT
The plots are planted with traditional low-growing vines (10,000 vines/ha and single Guyot pruning).
VINIFICATION AND AGEING
Hand-picked at optimum ripeness.
Vinification: gentle extraction, with a high proportion of whole grapes (80 to 100%), in wooden casks.
Aging: 12 months on average, entirely in 1-wine barrels.
