All the finesse of delicately pressed Chardonnay
Terroir
The name of this cuvée refers to its unique vinification using a vertical press. This type of press, used from the Middle Ages until the 1960s before being replaced by horizontal mechanical and pneumatic presses, has been reintroduced and defines the style of this wine. It comes from our “Montagne de Cras” plot in Nantoux. “Cras”, meaning “stones” in Celtic, reflects the diverse soil of the plot, both stony and clayey. The four-hectare plot consists of three hectares of vines and one hectare of natural areas with high biodiversity including rocky areas, hedges, orchards, limestone meadows with numerous orchids and a few rare service trees whose hard wood was once used to make press screws.
Vineyard management
The vines are low with a density of 8,000 plants per hectare, trained in simple Guyot and fan shapes, and partially in lyre shape following double Guyot pruning.
Vinification and aging
Harvesting is manual at optimal maturity. The vertical press allows slow and gentle pressing, producing clear, high-quality juice while avoiding settling. Vinification takes place in 228-liter barrels. Aging is long on the lees for around 12 months, 50 % in new barrels, followed by several months in tanks before bottling. The wines are unfiltered, unfined, and not cold-stabilized, and may naturally show some sediment.
Tasting notes and food pairing
The nose is precise and intense with ripe citrus, honey, and white flower notes. The palate is tight and sculpted, long with a dynamic structure and perfectly integrated oak. This gastronomic Chardonnay pairs beautifully with poultry, smoked salmon, sea bass with fennel, gratin dauphinois, or aged Comté. It can be enjoyed over three to five years.
