Tasted by William Kelley on August 5, 2021: "This superb Chablis Premier Cru bursts with aromas of yellow orchard fruit, roasted almonds, peach, vanilla bean, and beeswax. It's fleshy, with a nice texture, it's a full and lively wine, which concludes with a sapid finish."
The winemaker: Thomas also stands out within the Chablis vineyard in general, thanks to his decision - in line with the de Moor's - to grow his vines organically and harvest by hand. Biodynamic certification, a challenge that few dare to attempt in Chablis, was obtained in 2009. His parcels are distinguished by their soft, plowed soil in a region where vineyards still too often resemble a barren moonscape.
