VILLAGE'S ORIGIN
Fixin and Fixey form a single commune since the imperial decree
of 1860. The village owes its reputation to the "Réveil de
Napoléon" located in the magnificent Noisot Park. This monument
in bronze depicting the resurrection of the Emperor Napoléon was
created by the great Dijon sculptor François Rude and his friend
Noisot, one of the veterans of the Empire campaigns.
Fixin is one of the most beautiful villages on the coast. The top of the
hillsides of Fixey and Fixin is now completely naked. Where
the cultivation of the vines stops and the land starts
quite arid wilderness. Trees can only be found in the Fixin Valley, where
there is a wood of a beautiful vegetation that covers the whole hillside
exposed to the North.
ORIGIN OF THE PLOTS
The commune of Fixin is sheltered from the excesses of the burgundy climate:
it benefits from such a favourable mesoclimate that the
oldest winemakers remember only one devastating
hailstorm.
- The lieux-dits of our village appellations on the commune of
Fixin are "Aux Crais", "Petits Crais" (land register of 1828) and "en
Crechelin". The toponym "crai" (stony ground) in the masculine form
meant a cultivated area where the subsoil formed by an
agglomeration of rolled pebbles laid on a clay layer
is the product of the alluvium that filled in during the Ice Age,
the whole Saône valley. The vine thrives in this land,
when the "crai" is covered with a fairly thick layer of humus.
CHARACTER OF THE WINES
Fixin is a delicately colored wine, which surprises by its
structure most often tannic in nature and is thus more characterized
by robustness than by finesse. Gifted with a
good acidity, it has a solidity and a certain matter that
puts it in the wines of medium ageing capacity. Young, its aromas are
bestial, even wild, fur, musk. It is a rich wine that
has a bouquet that blooms with age.
STORAGE AND SERVICE
The Fixin is a classic of Burgundy: a steady and slow
evolution, because of their tannic note, makes it a wine that you can
expect to consume around 4 to 6 years of age for the more supple years
and keep up to 8 years for great vintages.
You can accompany it with traditional gastronomic
Burgundian cuisine: coq au vin, daube, boeuf
bourguignon, stew for older wines, and classic
cheeses.
