- Soil and subsoil: Shallow soils. Presence of numerous oolites in the bedrock. Clay-silty soils rich in pebbles.

- Plantation density: 13,600 vines/ha
- Organic farming. ECOCERT® certification received in 1999.

HARVEST
- Date of harvest: September 12, 2017 (root day).
- Hand-sorted in the vineyard and on arrival in the winery.
- Yield: 31 hl/ha
VINIFICATION
- 34% of whole bunches, not crushed and vatted by gravity. No yeast addition. Maceration: pre-fermentation, cold (12-15°C) during 5 days. Length of maceration: 22 days. Cap-punched once a day until mid-fermentation and light pumping-over until the end of maceration. Pressing with the vertical press.
MATURING
- Length: 16 months and 1 month in stainless steel vat
- Type: in barrels.
- Percentage of new barrels: 26%
- Gentle, slow toasting.
- Origin of the woods: Citeaux
- Racking of all barrels.
- No fining. Light filtration.
BOTTLING
- February 5 and 12, 2019 (Root and Fruit Day)
- Limited to 3682 bottles and 120 magnum bottles.
