- Comments from the Cellar Master Odilon de Varine: "A rosé with a high proportion of Chardonnays to be as comfortable as an aperitif as during a meal. The Chardonnays bring freshness and straightness, and the addition of red wines from Bouzy and Ambonnay bring fruitiness.
- Vinification and maturation on lees to avoid premature oxidation.
- Malolactic fermentation is carefully avoided in order to preserve the naturally fruity aroma of the wines and to ensure perfect conservation. The red wines of Ambonnay and Bouzy make it possible to obtain a delicately coloured rosé with a fruity taste.
- Raw dosage (8 g/l) to maintain the balance between freshness, fruitiness and vinosity and not to mask the character of the wine and its purity.
- Aged for a minimum of 3 years in the cellar at constant temperature, much longer than the legal minimum of 15 months.
- Tasting notes: A soft and fluid salmon pink colour with some ruby-cherry highlights.
- The nose expresses the strawberry, in its fresh form as well as in that of jam or cooked fruit. The palate is structured while maintaining a constant balance between the tension of freshness and the roundness of fruit. It is dominated by the pulpiness of the red fruit such as wild strawberries (cream or coulis) giving a soft and enveloping sensation. The palate is round with a nice freshness in the end.pairing: Fruits suit it well by its tender side, reflecting its youth. Foie gras for its boldness and the search for fat and sweetness around the wine's vinosity. Wild salmon, Tarama, small fish tapas, grilled veal, poultry, strawberries, raspberries, blueberries...
