Cuvée 749 is made from the 2021 harvest, primarily sourced from the terroirs of Aÿ, Dizy, Hautvillers, and Champillon (72%), complemented by Avize and Oiry (28%). The year began with a period of drought, quickly followed by a cool spring marked by frost. Temperatures rose in June, but the season was then punctuated by thunderstorms and significant rainfall, particularly in mid-June and mid-July. These conditions fostered high mildew pressure throughout the growing season, while botrytis appeared early, as early as August.
The return of drier weather from mid-August onward allowed the grapes to reach excellent ripeness. The harvest, intentionally late, took place from September 20th to October 1st to prioritize concentration while preserving the wine's elegance and finesse.
The viticulture, attentive to the soil and the vine, highlights the diversity of the plots. Vinification and aging are carried out in large oak casks, without filtration or fining, respecting the wine's original character. Chardonnay still largely dominates this blend, enriched with 28% reserve wines from cuvées no. 743 to 748 (excluding 745).
Production: 191,794 bottles, 8,015 magnums, and 390 jeroboams.
Dosage: 2 g/l (from June 2025).
