Great wine of Burgundy - Domaine Pillot Fernand & Laurent
Vinification
The grapes are harvested by hand, transported to our cellar, destemmed and put in vats. After a few days of cold maceration, the alcoholic fermentation is carried out in the traditional way, with regular trapping, as well as a meticulous control and regulation of the vatting temperature. The wine is then aged in French oak barrels, 40 percent of which are new. The wine is bottled at the property after 18 to 19 months of maturation.
Tasting
- The Pommard 1 ° cru " Rugiens " is a wine with a strong character. Its dress is ruby, dark purple, the wine is virile with concentrated aromas of cherry pits, raspberry. With age comes pepper and licorice, eucalyptus and beautiful soft tannins. The nose is woody due to 18 months of ageing in new barrels, and the tannins are tightly packed, making it necessary to forget about this wine in the cellar for a few years. Patience will be rewarded by a silky wine, with an unusual density of texture. It can be paired with wild meat, game or Burgundian cheese, Cîteaux, Epoisses, Ami du Chambertin.
