- Tasting : Chinon Clos du Noyer has a brilliant cherry color and a pure, clear, fresh and aromatic bouquet with blackcurrant and redcurrant aromas as well as lemony and mentholated notes. Silky, round and very elegant on the palate, this is a full-bodied, intense and fruity Chinon with remarkably fine tannins and excellent vitality that carries the harmonious red through to a long, sweet and tart finish with licorice flavors and a seriously tight tannic structure that intertwines perfectly with the fine acidity of the Clos du Noyer, which is clearly Nicolas' best red Chinon of the 2018. Tasted in June 2021.
- Cellaring potential : To drink from 2023 to 2035
- Grape variety : 100% Cabernet Franc
- Terroir : Clay and sandy soil located on the top of the hillside of Panzoult. The vineyard faces south.
- Harvest : 100% Manual. Total manual destemming. Passage on sorting table Yield : 30 hl / ha
- Vinification : Open stainless steel vat 2 to 3 days of pre-fermentation. 12 days of fermentation. 3 days of post-fermentation. Crushing.
- Maturation : 100% stainless steel vat for 12 months
