VINIFICATION AND MATURING
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted carefully by hand and then destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during fermentation. The ageing lasts about 18 months in our own barrels, about a third of which are new.
