Bouzeron is a small village located in Côte Chalonnaise next to Rully. The surface area of the appellation is very small: 47 hectares.
INFORMATION ABOUT THE VINEYARD
This appellation is quite recent: it was created in 1997.
Bouzeron produces only white wines exclusively from the Aligoté grape. This grape variety is very old in Burgundy (17th century) and has been replaced everywhere by the Chardonnay.
VINIFICATION AND MATURATION
The grapes are harvested by hand and put in small boxes to avoid damaging the fruit. 1/2 to 2/3 is vinified in vats and 1/3 in oak barrels (20% new barrels) for 14 to 15 months on fine lees before bottling.
