Geographic Location
The Santenay appellation is located at the southern end of the Côte de Beaune. The "Clos des Gatsulards" vineyard is located directly opposite Clos de Malte, at a slightly higher altitude. Facing south, the stony, sloping terrain warms up quickly and benefits from a very ventilated area.
Terroir Characteristics
The soil, particularly stony and steep, is demanding to cultivate. This configuration, combined with ideal exposure and regular winds, promotes optimal grape ripening and a beautiful expression of the terroir.
Vinification and Aging
Harvesting is carried out manually in small crates to preserve the integrity of the berries. The grapes are sorted by hand and then completely destemmed. Maceration lasts 3 to 4 weeks in open vats (wooden or stainless steel), with two daily punchings during fermentation. Aging lasts approximately 18 months in barrels, a third of which are new barrels from the house cooperage.
