GEOGRAPHICAL SITUATION
The Côte Chalonnaise is located south of the Côte de Beaune Beaune to the south of Santenay. Mercurey is one of the 5 villages on this coast.
CHARACTERISTICS
The vineyards surrounding the village are south and east/north-east. The soils are somewhat similar to those of the Côte de Beaune. Beaune, produce tannic wines. Fortoul is one of the Fortoul is one of the most prized Premiers Crus.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted carefully by hand and then destemmed. The maceration of the of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over 2 times a day during fermentation. The ageing lasts 18 months in barrels from our cooperage, of which about a third are new. of which are new.
