Collector's bottle of the estate. This new vintage is produced only in 1,336 magnums, all numbered: a very limited edition.
Presentation : Traditionally in Burgundy, the greatest wines were classified "Off-line". This wine comes from the Les Chavances plot (1.5 hectares), planted in 1988, from which the estate has selected the best grapes, to produce only 1336 magnums, each of which is numbered. The clay-limestone soil, rich in iron and silt, as well as a vinification (30% whole harvest) and a very careful maturing process, give the wine amplitude, complexity, balance and elegance. The floral, graphite and black berry notes make it a wine ready to drink, but also a wine to keep for a long time.
Why an "Hors Ligne" Cuvée?
In 1855, Doctor Lavalle, Professor of Medical Natural History in Dijon, in his masterly "Histoire et sta/s/que de la Vigne et des Grands Vins de la Côte d'Or", took up the classification of Burgundy wines that had been in force for centuries. The greatest wines are called Tête de Cuvée or Cru Off-Line. Then come the First Cuvées, Second Cuvées and Third Cuvées. This cuvée seemed to us to deserve its classification as Off-Line.
Terroir
This wine comes from the plot Les Chavances (1.15 Hectare), in Mercurey, planted in 1988 and located at the bottom of an amphitheater, thus determining a favorable microclimate. Its clay-limestone soil is rich in iron and silt.
Vinification and maturing
The estate has selected the best grapes from the plot to produce 1336 magnums, all numbered. Particular care was taken during the first phase of vinification, 30% of which was made from the whole harvest, favouring pumping over and small extractions, followed by a few manual punching of the cap. The maturing process is 100% in wood, 25% of which is new for 11 months, followed by a 3-month maturing in vats, which gives the wine a very delicate woodiness.
Tasting
Intense and deep ruby color. Intense, complex nose, expressing small black fruits and floral, graphite, pepper and clove notes.
Palate: beautiful tannic structure, ample in the middle of the mouth. Nice balance of tannins and a lot of freshness.
Food and wine pairing
Red meat in sauce, duck breast, sautéed veal, pork loin, beef bourguignon, cheese platter (époisses, camembert...)
Garde
Ready to taste but can be kept for 15 to 20 years.
