Mercurey En Pierrelet 2015 - Château de Chamirey
TERROIR :This cuvée comes from two parcels "En Pierrelet", planted in 1990.
Total surface area: 2,9670 hectares. Small predominantly limestone clay terrace. Facing South-East, the vines are located just behind the Château. VINIFICATION : In a concern of quality, the grapes are harvested by hand. Then the harvest is sorted by hand. The bunches are then put whole in a pneumatic press. The juice is settled after pressing for 12 to 24 hours at controlled temperature. After racking, the alcoholic fermentation starts in stainless steel tanks and is completed in oak barrels (15% of which are new). In these containers, the maturing process continues for 11 months during which the malolactic fermentation is 100% complete.
TASTING NOTES : Bright robe with green and gold reflections. The nose develops pastry and herbaceous aromas such as cut herbs and dry flowers. Aromas of butter and brioche. In the mouth, the wine is rich and complex, slightly woody at the end. Very nice saltiness, length. A voluptuous wine.
GASTRONOMY : Oysters, a seafood platter, fish cooked in papillotte will sublimate this Mercurey En Pierrelet 2015.
AGING POTENTIAL: To be enjoyed now at an ideal temperature of 12-14°C or to keep for 3 to 5 years.
THE ART OF TASTING : We too often forget that it is not enough to have good wines in our cellar, but that we must also know how to serve them. The temperature is an essential element, about 12° for the whites and 15° for the reds, and without a good tasting glass that will amplify the wine's aromas, one is sure to diminish one's pleasure. A good glass gives the wine a large airing surface and a tightening of the neck, which allows the nose to better grasp the richness and complexity of the great wine.
