VINIFICATION
Hand picked, 25kg crates, grapes are sorted, destemmed, not crushed, and gravity-fed.
Vinification in truncated cone-shaped wooden vats of small volume (25 hectolitres), native yeasts, vatting for 18 to 25 days, moderate pigeage.
MATURING & BOTTLING
Maturing in cold cellar, 50 to 80% new barrels, on lees (16 to 18 months)
Racking one month before bottling
No filtration, no collage
