PARCEL

  • Location: Nuits-St-Georges sits on the marble of Comblanchien, leaning against the coast at the outlet of the Combe de la Serrée in the sedimentation cone of the Hautes-Côtes.
  • Grape Variety: 100% Pinot Noir
  • Soil and subsoil: soil very rich in active limestone. Limestone blocks smoothed by erosion, can be found; marls with Ostrea acuminata, oyster fossils reminiscent of the Polynesian sea that extended here 200 million years ago.
  • Area: 3.0771 ha
  • Exposure: South
  • Plantation density: 13,600 vines/ha
  • Organic farming since 2012. ECOCERT® certification received in 2015
  • Bio-dynamic agriculture since the 2012 campaign
  • Pruning: Guyot

HARVEST

  • Harvest date: September 11, 2017 (root days)
  • Yield: 31 hl/ha

VINIFICATION

  • 50% whole bunches, not crushed and transfered into vats using gravity.
  • No yeast or enzymes.
  • Cold pre-fermentation maceration (12-15°C) for 5 days.
  • Total maceration: 23 days
  • One punching down per day until mid-fermentation, then one light pumping over per day until the end of vatting.
  • Pressing with the vertical press.

MATURING

  • Length: 13 months in barrels and 3 months in stainless steel vats.
  • Type: in barrels.
  • Percentage of new barrels: 45%
  • Gentle and slow toasting.
  • Origin of the woods: forest of Cîteaux and Tronçais.
  • Racking of all the barrels.
  • No fining. Light filtration.

BOTTLING

  • December 5 and 6, 2018 (Flower and Leaf Day).
  • Limited to 7386 bottles, 2000 Magnums, and 120 Jeroboams
