Crafted in the heart of the Côte des Bar by artisan winemaker Olivier Horiot in Les Riceys, the *Ailleurs* cuvée embodies a unique, free-spirited, and deeply vibrant approach to the Champagne terroir. The result of meticulous craftsmanship in both the vineyard and the cellar, this wine undergoes careful vinification in wood using indigenous yeasts, followed by extended aging on the lees that imparts a remarkable patina. On both the nose and the palate, the wine stands out for its assertive personality and textural complexity: it reveals a rich, enveloping structure, punctuated by subtle nuances of ripe fruit, pastries, and sweet spices, alongside a fine mineral note that extends the finish with beautiful tension.
