Sirocco Rouge 2017 - Domaine de Vaccelli
Appellation Ajaccio
Tasting : It is superb in the mouth. One finds finesse, a silky touch and a beautiful length. A basket of black fruit on tasting. Notably notes of blackberries and morello cherries. The finish is accompanied by slightly spicy notes.
Grape Varieties: Sciaccarello and Elegante
Food and wine pairing: Monkfish style fish, steamed vegetables, saffron rice.
Keeping: A great ageing potential for this cuvée. You can keep it for 8 to 10 years in the cellar. For the more impatient and gourmet, do not hesitate to decant it during these young years. The ideal serving temperature for this wine is 16°C.
The Terroir : This cuvée comes from the granitic Arena hillsides near the Taravu valley.
Vinification: Aged for 12 months in eggs for 1/3. All the rest in demi-muids, mostly new. The ageing of the Sirocco cuvée is prolonged and gives birth to a wine with fine tannins, typical of Sciaccarellu.
