LA CUVEE: The name comes from a legend which tells that in this place, the evil spirits wandering around at night would have turned into wolves. If we decompose the name, we find Jarol added to the suffix ière. Jarol would derive from Garol or Varol which, in Old French, means "evil spirit".

GRAPE VARIETY : 100% Pinot Noir

SURFACE AREA : 1,44 ha

VINEYARD: Three acres in total for this premier cru facing east, bordered by a stone wall at the top of the hill. The soils are limestone, with a high percentage of clay. A third was planted in 1925, the rest in the 1960s, 1970s and 1990s. Age of the vines: 30-100 years

WINEMAKING PROCESS: Hand-picked. De-stemmed. Cold maceration for one week; fermented on indigenous yeasts in vats. Aged in French oak barrels (30% new) for 18 months. Minimal addition of sulphur. Displacement by gravity; bottled without filtration and without addition of fine particles.

TASTING : Aromas of black cherry, black raspberry, chocolate dust. Earthy, textured but refined; medium tannins, ripe blackberry and red berry flavours.

FOOD AND WINE AGING PARTNERS: Flanchet with pepper; oeufs en meurette (poached eggs in red Burgundy); mature French cheese

DOMAINE: Domaine de la Pousse d'Or has for decades been the collectors' choice for expressive and memorable wines from Burgundy's most sacred terroirs, and is unquestionably one of the elite of Burgundy. The history of Pousse d'Or in Volnay underlines its influence through the ages. In 1855, the winery was part of a larger estate that included Romanée-Conti and Clos de Tart. In 1997, Patrick Landanger bought the winery and its vineyards. In the mid-2000s, Landanger added an impressive collection of Côte de Nuits vineyards (from Domaine Moine-Hudelot) to his portfolio. The estate's commitment to sustainable viticulture, following biodynamic principles, is serious. The vineyards are cared for without the use of pesticides or herbicides and are regularly ploughed.
