Tasted by William Kelley in 2022: "Bottled in February 2021 (no, that's not a typo), Defaix's 2009 Chablis 1er Cru Côte de Léchet bursts from the glass with aromas of honeycomb, golden orchard fruit, apricot, spice and dried white flowers. Quite powerful, full-bodied and satiny, this is a lively, saline wine with a delicately nutty finish."
Wine with a typical minerality reflecting its steep hillside. Its length and power reveal this exceptional vintage of great year where maturity is combined with an overabundance of over-ripe fruit. Fortunately, the mineral soil gives relief to the whole, without which the wine could make one think of the very rich wines of the Côte d'Or.
A nice match for snacked scallops, sole meunière, sea bass, lobster, turbot, emperor and white meats such as chicken or veal chop with cream and mushrooms or even most cheeses including old Comté.
