Tasting of August 5, 2021: "The 2019 Chablis 1er Cru Vaillons opens nicely in the glass, bursting with aromas of honey on the nose, orange oil, beeswax and toasted almonds. On the palate, we discover a super satiny and incisive wine, with tangy flavours and an elegantly satiny profile. It's already drinking well today, but could also develop well over a decade."
This wine is produced on the left bank of the commune of Chablis in the valley "dite Vaillons" on a very chalky soil which characterises this 1er Cru by giving it its mineral and floral notes.
The attack in the mouth is ample and supple, the bouquet reveals perfumes of white flowers and lime blossom with a vanilla side which brings complexity, tension and a beautiful length in the mouth.
The wine is vinified 100% in oak barrels.
