Charmes-Chambertin Grand Cru 2016 - David Duband
Tasting notes : Shimmering burlat cherry color. A nose of red and black fruits with an aromatic dynamic of pepper. A fine touch of sandalwood. The mouth is rich and fat with present and very slightly aggressive tannins which augurs a good ageing potential.
Food and wine pairing : Cute veal with blond tobacco flowers.
Method of vinification : The grapes are picked by hand, sorted and vinified with 80% whole harvest. During the 17 days of vatting, between 5 to 7 pigeages aux pieds are practiced, as well as pumping over. After pressing, the wines are racked for 2 weeks and put into barrels. Ageing is 40% in new barrels and 60% in 1, 2, 3 year old barrels. After 14 months of maturing, the wines are racked into vats, rested for 3 months and bottled without filtration or fining.
