Chassagne-Montrachet, located south of Puligny-Montrachet on the Côte de Beaune, is mainly known for its whites. This wine has been selected as one of the best climats of Chassagne-Montrachet Premier Cru. On a very stony hillside, the "Cailleret" has an excellent exposure, which ensures a perfect maturity before the harvest. Moreover this name comes from the word "Caille" which has the same origin as the word "cailloux" (pebbles).
Vinification & Maturing :
Traditional fermentation in oak barrels, 100% malolactic.
Maturing: 8 to 10 months in oak barrels, 50% new
Tonnellerie Louis Latour, French oak, medium toast
