Clos Vougeot Grand Cru 2014 - David Duband
Tasting : This Clos is certainly the most famous in the world. A deep ruby robe sparkling and brilliant. A nose of red fruits slightly closed with a smoky touch. The mouth is fresh with a powerful finish.
Food and wine pairing: Roast pigeon and French-style peas.
Method of vinification: The grapes are hand picked, sorted and vinified with 80% whole harvest. During the 17 days of vatting, between 5 to 7 punching of the cap on the feet are practiced, as well as pumping over. After pressing, the wines are racked for 2 weeks and put into barrels. Ageing is 40% in new barrels and 60% in 1, 2, 3 year old barrels. After 14 months of maturing, the wines are racked into vats, rested for 3 months and bottled without filtration or fining.
