Geology
The vines are located in the hamlet of Blagny, perched on the heights at the border between Puligny-Montrachet and Meursault, in the lieu-dit called La Pièce sous le Bois. The soil is predominantly clay-limestone. Pruning is done using the Guyot (Poussard) method, accompanied by various green works including shoot thinning, training, and topping.
Vinification
Manual harvesting is followed by sorting directly on the vines and again at the winery. Pressing is done using a pneumatic press to ensure a slow and gentle extraction.
Aging
After a light settling, the grape must is placed in 228-liter French oak barrels (15% new oak) where both alcoholic and malolactic fermentations take place naturally, using indigenous yeasts and bacteria. The wine is aged on fine lees for 18 months without bâtonnage (stirring). One month before bottling, wines from the different barrels are blended in stainless steel tanks. The wine is then racked, fined, and lightly filtered before bottling. Bottling is scheduled according to the lunar calendar.
Tasting Notes
This wine showcases the unique mineral and flinty character typical of Meursault. On the nose, the contrast between mineral notes and honey is striking. The palate is rich, fruity, and powerful, supported by spicy and mineral undertones.
Food Pairing
Pairs beautifully with spicy dishes from various world cuisines as well as traditional cream-based dishes (such as blanquette, shellfish, and poultry) or buttery preparations. It also complements foie gras perfectly. Serve at 12°C (54°F).
