When to drink it : Drink it now. This is a great mature Burgundy.
Tasting notes: "Lovely nose evoking flowers and toast, followed by more toast and an intense citrus note on the palate. Vividly structured and racy, this is a high-flying number that creates drama with every sip. The finish is excellent, with a citrusy, toasted bread aftertaste."
VINIFICATION
Hand harvested, sorted on the vine and then in the winery and finally pressed (pneumatic press) to obtain a slow extraction.
BREEDING
Racking after a light settling. The grape must is placed in 228 liter French oak barrels (15% new barrels) in which the alcoholic and malolactic fermentations will take place with indigenous yeasts and bacteria. The wine will be aged on fine lees for 18 months. No battonage. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for blending. Racking before fining and light filtration before bottling. The bottling is done according to the lunar calendar.
TASTING
The mouth is opulent between tension and finesse while leaving a fresh and mineral finish, well structured and long in the mouth.
METS
Fish, shellfish or white meat with a cream sauce. Serve at 12°c.
