CHARACTERISTICS
The village has 5 Grands Crus and 17 Premiers Crus. The soil is limestone and irregularly includes rocks, marl, sand, red silt and pebbles.
VINIFICATION AND MATURATION
The grapes are harvested by hand in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and destemmed. Maceration of the grapes takes place in open wooden or stainless steel vats for 3 to 4 weeks. The vats are pumped over twice a day during the fermentation. The wine is aged for about 18 months in barrels from our cooperage, of which about a third are new.
