Nuits St Georges 1er Cru 2016 Les Cailles - Bouchard Père et Fils

Situated in the southern part of the commune of Nuits-Saint-Georges, the Climat des Cailles stands out from its neighbours by offering a very feminine elegance. As early as 1892, it was already noticed by Messrs Danguy and Aubertin, who classified it as the "top of the vintage" in their book "Les Grands Vins de Bourgogne" (Great Wines of Burgundy). The Maison Bouchard Père & Fils owns 1.08 hectares of this exceptional terroir, with soil composed of oolithic limestone (limestone composed of small spheres the size of fish eggs "ooliths", formed by the concretion of limestone on hard grains).
TASTING NOTE : Intense bouquet of black berries mixed with woody and delicately spicy touches. Fleshy and full on the palate, it offers a structure with elegant tannins.
Very good ageing potential.
AGING POTENTIAL : Game, venison, meat in sauces.
SERVICE : Between 17°C and 18°C
WATERPROOF: 7 to 10 years and over
SALES: manual, in small 13 kg boxes. Careful manual sorting of each bunch.
VINIFICATION : After total or partial de-stemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 20 days.
MATURING: it is carried out for 12 to 14 months in French oak barrels, with 40 to 50% of barrels new.
AGEING: The cellars of the Bastions of the former Château de Beaune offer natural environmental conditions perfectly adapted to the ageing of the Premiers Crus.
