The Gevrey-Chambertin “Racine du Temps” Très Vieilles Vignes cuvée comes from two parcels, Le Créot and Pince-Vin, representing approximately one hectare of vines nearly 90 years old. These very old vines naturally produce millerandage grapes, concentrated and expressive. The two terroirs complement each other harmoniously: one rests on limestone pebbles and a subsoil of hard rock, the other on more marly soils, bringing richness and complexity to the wine.
This Gevrey-Chambertin expresses all the intensity and depth of the estate's very old vines. The palate is dense and concentrated, with a full texture that coats the palate without heaviness or sweetness. Its aromatic expression is particularly complex, blending notes of ripe fruit, violet, heather, spicy roots, and citrus. The whole lingers on a long, fresh, and remarkably smooth finish. This wine has a clear aging potential of 15 years or more.
The estate cultivates its vines with an environmentally conscious approach, employing regular soil work, massal selection, and entirely manual harvesting. After sorting on a sorting table, the grapes are gravity-fed into the vats, with approximately 50% whole clusters depending on the vintage. Fermentation occurs with indigenous yeasts, and vinification prioritizes infusion to preserve the purity of the fruit. The wine is aged for approximately 18 months in oak barrels, 30% of which are new, with limited use of sulfur and bottling according to the lunar calendar. Located in the heart of the vineyard slopes south of Brochon, the plots extend between 274 and 296 meters in altitude, facing south to southeast and sheltered from the cold north winds, on limestone and marl soils that reflect the area's rich geological heritage.
