Selections of 5 vines: rosières, Béranger, en muzard, corvées sous Curon and dessus des bruyères on the east side, chevrette
They all come from Bajocian limestone scree, most often covering Lias clay.
The vines are biodynamically cultivated and certified by Ecocert and Demeter. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and plant teas to treat the vines.
We make our own compost.
These vines are fully ploughed.
Manual harvesting in crates. Severe sorting, de-stemming, vatting for 1 month in truncated wooden vats with some trapping.
Aged in ½ muit (600 litre barrels) with 10% new for 1 year. Bottled without filtration. Low SO² dosage: 2g/Hl at vatting and 2g at bottling
Very good maturity of fruit, morello cherry, cherries in brandy, spices. Ample mouthfeel with fine, ripe tannins.
Very nice compromise between the typicity of the grape variety, the substance and the drinkability.
