Jura - Domaine André and Mireille Tissot
- Terroir : Clay-limestone marl of the same type as the blue marl for Savagnin. Terroir that keeps a nice acidity on the wines, and a nice structure.
- Grape variety: 55% Chardonnay, 35% Pinot Noir, 5% Poulsard and 5% Trousseau
- Cultivation method: Biodynamic vineyard, controlled by Ecocert and Demeter. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products.
- For treatment: sulphur, copper and plant teas. Home-made compost is produced and added. These vines are completely ploughed.
- Vinification: The pressing is pneumatic without too much re-drying. The wine is lightly settled, then fermented in stainless steel tanks. Fermentation takes place between 16° and 18°C.
- Ageing: on lees for 4 months. Malolactic fermentation is carried out during this ageing process.
- The wine is matured in cool cellars at 10°C.
- Aged on laths for 18 months.
- Dosage: 2 grs/litre.
- Tasting :Fine and delicate bubbles, this crémant offers freshness and elegant fruitiness.
