Terroir
Clay-limestone marls typical of the Jura region, similar to the blue marls used for Savagnin. These soils allow the wine to retain a beautiful natural acidity and an elegant structure.
Grape Varieties

• 35% Trousseau
• 30% Poulsard
Farming Practices
Vines cultivated biodynamically, certified by Ecocert and Demeter.
• No herbicides, chemical fertilizers, or synthetic products
• Treatments based on sulfur, copper, and herbal teas

• Complete tilling of the soil
Winemaking
Pneumatic pressing, light settling.
Spontaneous fermentation in stainless steel tanks between 16 and 18°C.
Partial aging in oak barrels.
100% spontaneous secondary fermentation.
Aging
Aged on lees for 4 months. Secondary fermentation in a cool cellar (10°C).
Aging on lees: 18 months.
Dosage: 0 g/L (zero dosage).
Disgorgement: July 2025.
Tasting Notes
Fine and delicate bubbles.
A very dry, lively Crémant, marked by a beautiful freshness, light red fruit notes imparted by the Poulsard and Trousseau grapes, and a taut finish.
