The vin jaune is well known, as is, more rarely, the savagnin ouillé (or floral). However, Stéphane feels that two vinification methods for the same grape are ultimately too simple. So why not consider an intermediate approach, with an unoaked savagnin, matured under veil, but not for the usual 6 years of vin jaune, just... 36 months.The grapes come from two plots with predominantly clay soil, situated on limestone subsoil, at En Spois and La Vasée.These two plots are ploughed and tended according to the principles of bio-dynamics, to which Stéphane has adhered for over 15 years, loving to express the identity of each terroir with maximum sincerity.
Tasting notes
From the very first nose, you get the impression that you're not dealing with a simple wine, but rather with a perfume extract, capable of perfuming the whole room! Its evocative power is simply incredible. Describing the wine without falling into a Prévert-like inventory is difficult, but let's try anyway:cardamom, cloves, tapenade, green pepper, walnut oil, bergamot essence, camphor, eucalyptus and liquorice extract, morel or black truffle, saffron, curry, hazelnut, dried apricot, fig or date, plum sauce,lemon or candied kumquat, a surprising iodine dimension, between crab shell and squid ink, but also mysterious decoctions of dried herbs and flowers worthy of an old green Chartreuse...
