Geology
The vines are located in the village of Cheilly-Les-Maranges, to the northwest of the village. The soil is clay-limestone with stones. The vines are pruned using the Guyot (Poussard) method, with various green work such as shoot thinning, training, and topping.
Vinification
Harvesting is done manually, with sorting performed directly on the vines, followed by sorting on a table (and some years using an optical sorter) before the grapes arrive at the winery.
Aging
After gentle crushing and destemming, the grapes are placed whole in stainless steel tanks. Depending on the condition of the fruit, a portion of whole bunches may be included. A cold maceration lasting a few days precedes the controlled-temperature fermentation. During fermentation, remontage and/or pigeage techniques are applied. Once fermentation is complete, the free-run juice is separated from the solids, and the pomace is gently pressed in a pneumatic press at low pressure. The wine is then aged in barrels, about 30% of which are new oak, for 14 months during which malolactic fermentation occurs. One month before bottling, wines from different barrels are blended in tanks. No fining is done, and a light lenticular filtration is applied before bottling. Some adjustments to the overall technique may be made depending on the vintage. Bottling follows the lunar calendar.
Tasting Notes
The wine shows a deep ruby color with aromas of forest floor. The palate is full-bodied, balanced, and tannic.
Food Pairing
Pairs well with red meats, white meats in spiced sauces, and aged cheeses. Serve at 14°C (57°F).
