Geology:
The vines are located in the village of Puligny Montrachet, in the south of the Côte de Beaune. The ‘Les Combettes’ climat is located to the north of Puligny, between the villages of Meursault and Puligny Montrachet. The soil is composed of a very stony clay-limestone substratum and light brown soils, and faces east. The vines are pruned using the Guyot method (Poussard) and various green harvesting techniques (disbudding, trellising, pollarding).
Vinification:
The grapes are harvested by hand, with sorting on the vines and then in the winery, followed by pressing in a pneumatic press for slow extraction.
Ageing:
After a light settling, the must is placed in 228-litre French oak barrels (15% new barrels) where alcoholic and malolactic fermentations take place with indigenous yeasts and bacteria. The wine is aged for 18 months on fine lees, without stirring. One month before bottling, the wine from the different barrels is blended in a stainless steel vat. The wine is racked before fining and lightly filtered before bottling, which follows the lunar calendar.
Food and wine pairing :
Oily fish such as turbot, Saint-Pierre and brill, as well as all creamy or buttery sauces, will flatter its elegant roundness. Its complexity calls for rich, gourmet cuisine. Serve at 12°C.
