From the estate
Vine Age
The vines are approximately 50 years old, offering the perfect maturity to express the full complexity and depth of the terroir.
Terroir & Geology
The vineyard is located in the village of Puligny-Montrachet, in the southern part of the Côte de Beaune. The "Les Pucelles" climate is one of the most prestigious Premier Cru sites in the appellation, lying just next to Bienvenues-Bâtard-Montrachet. The soil is clay-limestone with a high content of gravel, providing excellent drainage. The slope is gentle. The vines are pruned using the Guyot method, with meticulous canopy management (de-budding, trellising, and trimming).
Vinification
Grapes are harvested by hand, with a careful selection in the vineyard followed by another sorting at the winery. They are gently pressed using a pneumatic press to ensure a slow, delicate extraction of the juice, preserving finesse and aromatic purity.
Ageing
After a light settling, the must is transferred into 228-liter French oak barrels (15% new) for fermentation. Both alcoholic and malolactic fermentations are carried out with indigenous yeasts and bacteria. The wine is then aged on fine lees for 18 months without bâtonnage. One month prior to bottling, the barrels are blended in a stainless steel tank. The wine undergoes gentle racking, fining, and light filtration before being bottled in accordance with the lunar calendar.
Tasting Notes
The nose is complex and expressive, revealing notes of citrus (pink grapefruit), gentle spices, and subtle musky undertones. On the palate, it shows ample power, density, and a silky texture. A strong mineral character runs through the wine, accompanied by a beautiful saline finish and vibrant energy.
Food Pairings
Perfect with fine fish dishes, shellfish, or white meats in a creamy or fresh cheese-based sauce. Serve chilled, around 12°C (54°F).
