Directly from the wine estate
VINIFICATION
The grapes are harvested by hand, then selected from the vines and sorted in the winery. Finally, the grapes are pressed using a pneumatic press to ensure slow extraction.
AGEING
The grape must is lightly settled before being transferred to 500-litre French oak barrels, 10% of which are new. Alcoholic and malolactic fermentation take place naturally using indigenous yeasts and bacteria. The wine is aged for 15 months on its fine lees, without stirring. A month before bottling, the wines from the different barrels are brought together in a stainless steel vat for blending. Racking is carried out before fining, followed by light filtration before bottling, in accordance with the lunar calendar.
TASTING
The wine is distinguished by its pronounced minerality and freshness. The nose reveals floral notes, while the palate offers perfectly integrated acidity and a lingering finish. The overall impression is one of remarkable complexity and fullness.
FOOD PAIRING
Ideal with white meats, fish, shellfish and goat's cheese. Enjoy at a temperature of 12°C.
