Grown on a very stony terroir of Kimmeridgian marl, this Premier Cru expresses with precision all the nobility of Chardonnay on limestone soil: a taut, pure, and structured palate, marked by superb notes of citrus, green apple, rubbed stone, and a saline character typical of Chablis. William Fèvre has crafted a cuvée of great refinement, at once powerful, chiseled, and remarkably elegant.
Aging potential: A great wine for aging, this Chablis Premier Cru Montmains can be enjoyed young for its mineral tension and vibrant freshness, but reveals its full complexity after a few years in the cellar. Depending on the vintage, its peak is generally between 6 and 15 years, with the potential to extend beyond that in exceptional years. With time, its texture gains in breadth and develops deeper notes of ripe fruit, oyster shell, hazelnut, and flint.
Food and wine pairings: Chablis 1er Cru Montmains pairs beautifully with seafood: oysters, scallops, lobster, grilled fish, or fish in a cream sauce. It also goes very well with fish tartare, sole meunière, poultry in a cream sauce, or seafood risotto. Its saline tension and mineral finesse make it an ideal partner for delicate and refined seafood dishes.
