Sweetness index on the palate : 1 : technically dry wine or tasting dry.

  

Tasting : This is a racy and powerful wine that will need a few years in the cellar to reach its final potential and balance. The fermentation is particularly slow for this wine. This can be explained by a higher acidity and especially a very low pH. We are not in the presence of a fruity type, the mineral aspect is dominant, it causes a nice salivation in the finish. This wine requires a little patience.

Average age of the vines: 45 years

Terroir: Clay-limestone-siliceous, east and south facing

Description: This wine is mainly a blend of various small vineyards scattered around the village of Gueberschwihr, to which we add the very small production of our two young vines located on the Grand Cru Hengst. Wines produced on a limestone-based geology, regardless of topography and location, tend to share specific characteristics. They are generally less expressive in their youth and will take time, sometimes years, to show their full aromatic potential. In their youth, these limestone wines always express a strong sense of austerity, especially on the palate, which carries an energetic acidity. A limestone soil ripens the grapes late by definition because it takes longer to warm up, especially in the village of Gueberschwihr where the proportion of clay is higher. They are drought resistant and tend to give a certain vigor to the vines.

1: technically dry or tasting dry. 2: not technically dry, but the sugars are not obviously apparent on the palate. Some tasters may find a slight roundness on the finish. These wines will taste dry with some bottle ageing. 3 : medium sweetness, more important in the youth of the wine, which will gradually fade with age. 4 : Sweet wine. 5 : Sweet wine, very close to a Vendange Tardive
