Product description
The name "Vigne de l'Enfant Jesus" refers to a historical anecdote. It is said that Marguerite du Saint-Sacrement, Carmelite founder of the Domestiques de la famille du Saint Enfant Jésus, is said to have predicted the birth of the King of France Louis XIV when his mother Anne of Austria was sterile. At the birth of the future Roi Soleil, this exceptional vineyard belonging to the Carmelites took the name of "Vigne de l'Enfant Jésus". In 1791, at the time of the sale of the national property, the Maison Bouchard Père & Fils acquired the parcel, located in the heart of the 32 hectares of the Beaune Grèves appellation. It still has the monopoly today.
Superb bouquet of fruits and spices with a hint of barrel. Intense, full and delicate on the palate, it is enchantingly velvety.
WINE AND FOOD AGREEMENTS: Game birds, chicken in cream sauce, Burgundy cheeses.
SERVICE TEMPERATURE: Between 17°C and 18°C
CELLARING POTENTIAL: 7 to 10 years and over
HARVEST: manual, in small crates of 13 kg. Careful manual sorting of each bunch.
VINIFICATION : After total or partial de-stemming depending on the vintage, fermentation in small containers and gentle pressing ensure optimal vinification. Depending on the profile of the vintage, vatting can last from 15 to 20 days.
MATURING: 12 to 14 months in French oak barrels, with 30 to 50% new barrels.
AGEING: The cellars of the bastions of the former Château of Beaune offer natural environmental conditions perfectly adapted to the ageing of Premiers Crus.
GRAPE VARIETY: Pinot Noir
